Bistro Meal Hacks! Sweet Potato Stacks Appetizers

Our new sweet potato mash is so creamy and delicious, it makes the perfect side to any meal. So, we thought why not make it the perfect base for holiday entertaining. This simple flip can be made ahead of time and put together when company is on the way. We have done two versions: one to suit a plated appetizer, and the other as a grab and mingle finger food. We made these ones vegan, but you can swap out for any versions you prefer.

Directions

  1. Mix flax egg and let thicken.
  2. Add sweet potato mash, “egg”, and flour to a bowl. Mix until well-blended.
  3. Preheat a flat skillet to medium heat, add a small amount of oil and drop the potato mixture onto the pan making either bite size (about 1 tsp of mix) or larger (1 tbsp. of mix) pancakes. Let them cook until lightly browned, flip and continue to cook on the other side. When done remove them to cool on a wire rack. (You don’t want condensation under them from a plate to make them soft).
  4. Grill the sausage, slice on the bias and grill the slices to give them a little bit of colour.
  5. Top the sweet potato pancake with a small amount of jam, sprouts, a slice of sausage, and top with cheeses.
  6. Display on a serving tray or plate and enjoy!
