Vegan Mashed Potatoes
Note: If you are making only mashed potatoes or only smashed roasted potatoes (rather than both), double the ingredient amounts to compensate.
- Peel potatoes (or leave skin on for a hearty, rustic appeal), and boil until tender, 20 to 25 minutes; strain. Add all other ingredients, pouring in hot milk bit by bit, and using a potato masher to break potatoes down to desired consistency. Keep warm.
