Vegan Mac & Cheese
- Cook butternut squash and garlic in oven.
- Once butternut squash is soft, blend all ingredients in blender. At the same time cook pasta of choice. I used red lentil penne pasta (and it was INCREDIBLE) however next time I make this I’d probably use something closer to macaroni.
- Top with cayenne if you like it spicier. (Paprika powder and red Chili flakes are all optional for a spicy option)
