Vega: Fruit Leather
Whether you’re looking for a portable snack or a sweet treat to add to a lunch box, fruit leather usually fits the bill. Whether you eat it straight or roll it up, no one will ever guess that these have veggies in them too!
- Preheat oven to 175F and line a sheet pan with parchment paper.
- In a food processor or blender, puree mango and carrots until completely smooth. Taste and add sweetener if desired. Set aside.
- In a food processor or blender, add in strawberries and beets and puree until smooth. You may need to add a small amount of water to get it pureed. You are looking for the same texture as the mango – similar to thin custard. Taste and add sweetener if desired.
- On lined sheet pan, pour both mixtures together trying to swirl them together without mixing them too much. Try to make mixture as even as you can.
- Bake for 3 to 5 hours or until dry. After the first 2 hours, check on the fruit leather every 20 minutes to be sure you don’t overcook it.
- Once cool, cut fruit leather into strips and roll with parchment paper. Store in plastic bags or an airtight container. Keeps for 1 month.
Note: Having a hard time creating smooth fruit leathers? Use kebab skewers or chopsticks as risers on either side and then run something flat (such as a spatula or cake spreader) along the top to get an even surface.
