The Perfect (Healthier) Thanksgiving Gravy
Directions:
- In a medium saucepan over medium heat, warm the oil. Add onion and sauté for 5–7 minutes, until soft and golden.
- Stir in garlic and cook for another 30 seconds.
- Sprinkle in the flour or arrowroot and whisk for 1 minute to form a roux.
- Slowly whisk in the broth, stirring constantly until smooth.
- Add tamari, mustard, vinegar, thyme, and sage. Simmer for 8–10 minutes until thickened.
- For a smoother texture, blend with an immersion blender. Season to taste with salt and pepper.
- Serve warm over your Thanksgiving favourites—or freeze leftovers for the next Sunday dinner.
Tip: For a vegan version, use veggie broth and olive oil. For extra richness, stir in a splash of oat cream or cashew cream before serving.
