Smoky ‘Bacon’ Ramen Noodles

Directions
- Heat a little oil in a pan over medium heat. Add the tempeh bacon and cook until crispy. Remove from the pan and set aside.
- In the same pan, sauté the mushrooms and red pepper until tender. Steam the bok choy separately.
- Cook the ramen noodles according to package instructions. Drain, reserving a little of the cooking water for the sauce.
- In a bowl, whisk together the sauce ingredients, slowly adding hot water (and a splash of reserved noodle water if needed) until smooth and pourable.
- Toss the noodles with the sauce, then top with the vegetables and crispy tempeh bacon.
- Optional: garnish with sesame seeds, green onion, chili oil and fresh cilantro.
