Smoky ‘Bacon’ Ramen Noodles

This smoky bacon-style ramen is a simple, satisfying bowl for any night of the week. Savoury tempeh made with organic Canadian-grown soybeans adds rich, smoky flavour, while fresh vegetables and a creamy, nutty sauce bring everything together for a cozy, plant-based meal that’s full of flavour without feeling heavy.

Directions

  1. Heat a little oil in a pan over medium heat. Add the tempeh bacon and cook until crispy. Remove from the pan and set aside.
  2. In the same pan, sauté the mushrooms and red pepper until tender. Steam the bok choy separately.
  3. Cook the ramen noodles according to package instructions. Drain, reserving a little of the cooking water for the sauce.
  4. In a bowl, whisk together the sauce ingredients, slowly adding hot water (and a splash of reserved noodle water if needed) until smooth and pourable.
  5. Toss the noodles with the sauce, then top with the vegetables and crispy tempeh bacon.
  6. Optional: garnish with sesame seeds, green onion, chili oil and fresh cilantro.
