Roasted Root Vegetables
Set oven to 400°F (204°C).
Peel all veggies and cut into ¼- to ⅓-in (0.6- to 0.8-cm) slices. Toss with oil, salt, pepper, and nutmeg. Spread on a baking tray lined with parchment paper, and bake for 15 to 18 minutes, until tender and golden. Keep warm.
