Peaches & Cream Crêpes
Serves: 4 (makes 8 small crêpes) | Time: 30 minutes
Directions
- In a blender or mixing bowl, combine flour, milk, eggs, oil, vanilla and salt. Blend or whisk until smooth. Let rest for 10 minutes.
- Heat a nonstick skillet over medium heat. Lightly grease, then pour in ¼ cup of batter, swirling to coat. Cook 1–2 minutes per side until golden and lightly crisped on the edges. Repeat with remaining batter.
- Stir maple syrup or honey into the Greek yogurt. Add a dash of cinnamon if desired.
- Fill each crêpe with a spoonful of yogurt and peach slices. Fold or roll and top with extra fruit, a drizzle of yogurt and a tiny swirl of maple syrup if desired.
