No-Bake Matcha Bites
- Line the bottom and the sides of a 8” X 4” baking pan with parchment or wax paper.
- In a food processor, chop 1 cup dates with almonds and 2 tbsp melted coconut oil. Press the mixture firmly into the bottom of the pan.
- Blend the ½ cup of melted coconut oil, ½ cup canned coconut milk, ½ cup of soaked dates, 1 1 /2 cup cashews and matcha in a blender until smooth.
- Add 1 tbsp of hot water at a time to help the mixture blend. Pour over the date and almond crumble and garnish with desired toppings. Allot to set in the freezer for at least an hour.
