Grilled Kale and Citrus Salad
Serves 4 | 15 Minutes
- Preheat grill on medium heat.
- Toss green onions and kale with 2 tbsp olive oil and kosher salt.
- Place kale onto grill over indirect heat and green onions over direct heat. Close the lid and grill 2 minutes. Flip onions and continue grilling until kale is bright green and lightly charred in spots, another 2 to 4 minutes. (Keep a close eye on the kale as it can go from brown to burnt very quickly.)
- Chop kale and onions. Zest the orange. Peel and cut orange into 1″ pieces. Add to a bowl and toss with vinegar, zest and 2 tbsp olive oil. Add orange pieces and lightly toss to combine. Add salt to taste.
