Green Goddess Avocado Pasta
This has to be one of the most perfect pastas on earth! Brimming with flavour from fresh garlic, mounds of fresh basil and lemon juice and zest in a base of healthy avocados, this vegan sauce is velvety rich without the guilt. The sauce is made in a food processor or blender in seconds and requires zero cooking, a busy mom’s dream come true! If you don’t have garlic-infused olive oil on hand just use a really good olive oil. Nature’s Fare Markets has the best selection of these ingredients! Garnish it with additional fresh basil leaves or a generous handful of arugula.
- Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente, according to package directions.
- As the pasta cooks, combine all of the remaining ingredients in a food processor (a mini one will do as there aren’t many ingredients). Process until smooth, about 2 minutes.
- Drain pasta in a colander, reserving 1 cup in case sauce is too thick. In a medium bowl, add sauce to pasta and toss to combine. Add a bit of the pasta water if needed.
- Garnish with a handful of fresh basil or arugula leaves.
