Green Banana Muffins

Working on increasing your greens intake?  Or maybe your child’s greens intake?  If so, have you considered adding greens to your baking?  This little trick will probably work with your favourite muffin recipe, but give this tried and true recipe a try first.  These vibrant green muffins are made with wholewheat flour, naturally sweetened save the chocolate chips, and include several cups of spinach despite not tasting like it!

The trick?  Adding several cups of greens to your wet ingredients and blending it all up – that’s it!

Directions:

  1. PREPARE | Preheat the oven to 350° and prepare a 12 cup muffin tray by lining it with paper or silicone baking cups.

    MIX | Prepare your dry ingredients by adding them to a large bowl and whisking them together well.

  2. BLEND | Next, add the oil, water, seeds and vanilla to the blender.  Layer in the fresh spinach and the ripe bananas (the riper the better) and blend until completely smooth.  Feel free to use your tamper tool here if needed.
  3. COMBINE | Pour the green mixture into the dry ingredients.  Using a spatula, mix until just barely combined and then fold in the chocolate chips.
  4. BAKE | Divide the batter into the prepared muffin tin.  Bake for 18 to 20 minutes or until a toothpick comes out clean.
  5. ENJOY | Allow the muffins to cool for about 10 minutes before removing them from the tray.  Enjoy immediately, or store in an air tight container for later once fully cooled.

    HOT TIP:  This trick will likely work with your favourite muffin recipe!  Just add your usual wet ingredients to a blender, add a few big handfuls of spinach, blend until smooth, and carry on with your recipe as usual.

BABY OR TODDLER?  If you’re avoiding added sugars for now, feel free to leave the chocolate chips out.  The muffins are plenty sweet without them!
