Genuine Health: Blueberry Power Fermented Vegan Protein Pancakes
- Put all ingredients except blueberries in a blender. Blend on high until mixture is just smooth and the texture of pancake batter.
- Heat a large skillet over medium heat. Grease well with coconut oil.
- Add a large dollop of batter to the pan. Drop a few blueberries into the batter.
- Fry for 2-3 minutes until bubbles have formed on the top and underside is golden. Flip.
