Frozen Yogurt Chocolate Protein Cups

These are the snack that lives in your freezer and saves you from every mid-afternoon slump. A snappy dark chocolate base, a thick creamy yogurt and protein layer, berries on top — they look impressive, take about ten minutes of actual work, and cost almost nothing to make. The protein powder is optional but makes them genuinely filling as a post-workout snack or a dessert that doesn’t wreck your evening. Kids love them too.

Directions

  1. Line a 12-cup muffin tin with paper liners. Melt chocolate and coconut oil together in a small bowl in the microwave in 30-second intervals, stirring between each, until completely smooth.
  2. Spoon about 1 teaspoon of melted chocolate into the bottom of each liner and spread it to the edges.
  3. Transfer the tin to the freezer for 10 minutes until the chocolate layer is fully set.
  4. Meanwhile whisk together yogurt, protein powder, honey, and vanilla until smooth. Spoon the yogurt mixture over the set chocolate base, filling each cup about three-quarters full.
  5. Press a few berries into the top of each one. Freeze at least 2 hours or until completely solid.
  6. Peel off the liners and serve straight from the freezer.
  7. Store in a freezer-safe container for up to two weeks
