Budget Meals: Dump & Bake Plant-based Meatball Casserole
- Preheat oven to 425°F.
- In a 9″ x 13″ baking dish, stir together uncooked pasta, marinara sauce, spinach, meatballs and water. Season with salt to taste. Cover tightly with aluminum foil and bake 35 minutes.
- Peel back the foil and stir. Check the pasta to make sure that it is cooked al dente. (If it’s still too hard, recover the dish and return to the oven until pasta is cooked.)
- Remove foil and sprinkle cheese over the top. Return to oven and bake uncovered 5–10 minutes, or until cheese is melted and pasta is tender.
- Garnish with herbs and serve hot.
