Cookie Dough Bark

This cookie dough bark is simple to make and the most satisfying sweet treat. The cookie dough base has all the nostalgia of cookie dough batter. It’s nutty, smooth, creamy and slightly sweet. The base is then topped with a smooth chocolate shell coating, that has you thinking you are eating a classic chocolate chip cookie, with a healthier spin to it.

Time to Make: 25 minutes
Serves: 2-4 people

Directions

  1. Add all the cookie dough ingredients except the chocolate chips  into a bowl and mix until smooth. Then add the chocolate chips.
  2. Line a 8×8 pan with parchment paper and press the cookie dough base firmly and evenly into the pan.
  3. Place the cookie dough into the freezer for 10 minutes.
  4. Just before the 10 minutes are up, in a microwave safe container, add the additional dark chocolate and coconut oil to the container. Melt until smooth.
  5. Remove the cookie dough tray from the freezer and add the melted chocolate on top. Place back in the freezer for five minutes or until the chocolate has solidified.
  6. Then remove the cookie dough bark from the freezer and chop it as desired into big and little chunks.
  7. Store the cookie dough bark in a container in the fridge.
