Chicken & Greens Taco Bowl

This bowl brings everything together in a way that feels completely new. A simple taco seasoning gives the chicken warmth and depth, while sweet corn adds balance. Cottage cheese blends in for a creamy, protein-rich base you might not expect, and the avocado green dressing ties it all together.

It’s bright, fresh, and satisfying—and comes together in about ten minutes, thanks to your already cooked chicken.

Directions 

  1. Toss the shredded chicken with all the taco spices and a splash of olive oil. Warm in a pan over medium heat 3-4 minutes until fragrant and slightly crisped at the edges.
  2. Blend all dressing ingredients until smooth and season with salt. Build your bowl — greens first, then corn, then taco chicken, a scoop of cottage cheese in the centre, avocado alongside, and a drizzle of the green dressing over everything.
  3. Finish with fresh cilantro.
