Vegan Buffalo Cauliflower Dip

Can you have a game day get together without buffalo dip? Well you can…but why would you? Our vegan buffalo cauliflower dip is not only delicious, it is packed full of protein without the addition of a meat product. Roasted Cauliflower is what gives body to the dip while the rest just punch up the flavour.

Vegan Buffalo Cauliflower Dip

Directions

  1. Preheat oven to 450°F.
  2. Chop cauliflower into florets, including stems. Toss cauliflower with hot sauce until fully coated.
  3. Lay cauliflower on parchment lined baking sheet in single layer. Bake for 20 minutes until slightly crispy on the edges.

Sauce

  1. Lower oven temperature to 350°F.
  2. Boil potato and onion together until soft, about 10 minutes. Drain.
  3. Place the cooked potato, onion, and the rest of the sauce ingredients into a blender or food processor and blend until smooth. Add cooked cauliflower and pulse just enough to incorporate the cauliflower into the sauce – you want some chunks left.
  4. Pour the dip into a covered baking dish. Top with crumbled Pulse cheese and shredded Daiya cheese.
  5. Bake 15-20 minutes, until the top looks firm and the cheese is melted.
  6. Serve with celery sticks and tortilla chips.
