Decadent High-Protein Chocolate Cake
Directions:
- Preheat oven to 350°F (175°C). Line an 8-inch round pan with parchment.
- In a bowl, whisk all wet ingredients until completely smooth (blender works great).
- In another bowl, mix dry ingredients.
- Fold dry into wet just until combined. Stir in dark chocolate if using.
- Pour into pan and smooth the top.
- Bake 30–35 minutes, until just set in the centre (don’t overbake).
- Cool fully before slicing into two layers.
- Ice and decorate as you would like.
- Tip: Chill overnight for a truffle-like texture, it gets richer as it cools.
Optional High-Protein Chocolate Frosting (no sugar bomb)
- ¾ cup Greek yogurt
- 2 tbsp cocoa powder
- 2 tbsp nut or seed butter
- 1–2 tbsp icing sugar or monk fruit
- Pinch of salt
Mix until thick and glossy. Spread once cake is fully cooled.
