Tahini Pasta with Crispy Brussels Sprouts
Serves: 2–4 | 30 minutes
Directions:
- Wash and dry the Brussels sprouts, then slice them lengthwise.
Preheat a large pan over medium-low heat, and add the olive oil.
Add the sprouts and stir often to avoid burning. Cook until they are soft on the inside and slightly charred on the outside (roughly 20 minutes). Season with salt and pepper to taste.
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to the instructions on the package.
Prep the tahini sauce: add all the ingredients for the sauce to a bowl and whisk together. Set aside.
Once the pasta is done cooking, drain the water and add the pasta back into the pot.
Pour the tahini sauce over the pasta and add parsley, salt and black pepper. Top with the crispy Brussels sprouts.
Divide evenly and enjoy. Best served fresh.
