Holiday Spice Cookies
Directions
- Preheat oven to 350°F and line a baking sheet with parchment.
- In a large bowl, whisk together oat flour, oats, baking soda, spices and salt.
- In a separate bowl, whisk melted coconut oil, maple syrup, egg (or flax egg), vanilla and applesauce until smooth.
- Combine wet and dry ingredients. Fold in dark chocolate and cranberries (and orange zest if using).
- Scoop dough (about 2 tbsp each) onto the baking sheet.
- Bake 9–11 minutes, until edges are set but centres still look soft—this keeps them gooey.
- Let cool on the tray 10 minutes to firm up slightly while staying soft in the middle.
- Finish with a pinch of flaky salt for the perfect festive bite.
