Corn Ribs

Meet the ultimate summer side—Corn Ribs! Perfect for BBQs or weeknight dinners, these curly, golden strips are a fun way to enjoy corn on the cob. Roasting or grilling caramelizes the kernels, making them smoky, sweet, and irresistibly snackable. Plus, this recipe is healthy, light, and perfect for using fresh organic corn.

Serves 4

Directions

  1. Husk the corn and carefully cut each ear lengthwise into quarters (ribs). Use a sharp knife and a steady hand.
  2. Brush each rib with olive oil, then sprinkle with paprika, garlic powder, chili powder, salt, and pepper.
  3. Preheat grill to medium-high. Grill ribs for 8–10 minutes, turning occasionally, until slightly charred and curled.
  4. Preheat oven to 425°F. Place ribs on a lined baking sheet and bake for 20–25 minutes, flipping halfway.
  5. Squeeze fresh lime over the top and sprinkle with cilantro before serving.
