Peaches & Cream Crêpes

These light and wholesome crêpes are a fresh take on the classic peaches and cream. Made with Greek yogurt, juicy peaches and whole grain crêpes, they’re a perfect summer breakfast or dessert.

Serves: 4 (makes 8 small crêpes) | Time: 30 minutes

Directions

  1. In a blender or mixing bowl, combine flour, milk, eggs, oil, vanilla and salt. Blend or whisk until smooth. Let rest for 10 minutes.
  2. Heat a nonstick skillet over medium heat. Lightly grease, then pour in ¼ cup of batter, swirling to coat. Cook 1–2 minutes per side until golden and lightly crisped on the edges. Repeat with remaining batter.
  3. Stir maple syrup or honey into the Greek yogurt. Add a dash of cinnamon if desired.
  4. Fill each crêpe with a spoonful of yogurt and peach slices. Fold or roll and top with extra fruit, a drizzle of yogurt and a tiny swirl of maple syrup if desired.
