Grilled Peach, Chicken & Arugula Barbari Flatbread

This grilled flatbread is everything we love about summer eating—fresh juicy peaches, smoky grilled chicken and peppery arugula all layered on soft chewy Barbari flatbread. Finished with creamy goat cheese and a drizzle of balsamic glaze, it’s the perfect mix of sweet, savoury and satisfying. Serve it up as a light dinner, cut it into wedges for a shareable appetizer or enjoy it al fresco with a chilled drink in hand.

Serves: 2–4 | Time: 30 minutes

Directions

  1. Grill the Peaches: Lightly brush peach halves with oil (or honey for extra caramelization). Grill for 2–3 minutes per side until grill marks appear and peaches are tender. Slice.
  2. Warm the Flatbreads: Grill or toast flatbreads for 1–2 minutes on each side until warm and slightly crisp.
  3. Assemble: Top each flatbread with sliced grilled chicken, peach slices, arugula, and goat cheese. Drizzle with balsamic glaze and season with salt and pepper.
  4. Garnish & Serve: Finish with fresh herbs, chili flakes, or a touch more balsamic glaze if desired. Slice and serve warm.
