Yum Yam Tacos

Recipe featured on our Facebook Live event with Bonfire Nutrition. 

Directions:

1. Preheat oven to 350° F (176° C). In a bowl, combine yam, olive oil, salt, and oregano. Transfer to a baking sheet lined with parchment paper or a silicone baking liner. Bake for 1 hour, or until yams can be easily pierced with a fork. Set aside.

2. Warm the tortillas in the oven for about 5 minutes. Arrange on a serving dish for assembly.

3. Spread hummus on each tortilla. Layer on cilantro pesto,shredded carrots, and yam. Top with avocado,cilantro, and mango salsa. Finish with a splash of lime or lemon juice. Enjoy!

Customize:

No tortillas: Substitute with lettuce corn tortillas and heat according to package instructions.
Like it spicy: Add hot sauce, kimchi, or cayenne pepper.
Like it saucy: Drizzle the assembled tacos with mayonnaise or sour cream.
More protein: Add chicken, fish, or beef.
