Tikka Masala Roasted Cauliflower

A whole roasted cauliflower is the perfect meatless comfort food option, it can easily be adapted to work with any flavour. This one is super easy! We have used the amazing Poppadoms Tikka Masala sauce, so all the seasoning is done for you.

Tikka Masala Roasted Cauliflower

Directions

  1. Preheat oven to 400 degrees F
  2. Remove all leaves and the stem of the cauliflower, while keeping it together as a whole. It should sit flat in the pan, stem side down.
  3. Rub cauliflower with avocado oil and sprinkle with salt and pepper.
  4. Place in baking dish, cover, and bake for 30-40 minutes depending on size. It should just be knife tender.
  5. Remove from oven, baste with Tikka Masala sauce, and return to oven uncovered for 10 minutes or until golden on the top.
  6. Slice and serve!

Tikka Masala Roasted Cauliflower

Optional: Roast with roughly chopped carrots, onions, whole garlic cloves, and sweet potatoes.
