Sugar Free Sugar Cookies

Normally you don’t want to mess with a classic recipe, especially one as timeless as holiday sugar cookies. However, this twist from Bailey Campbell taste like they came from grandma’s but they are sugar and gluten free!

Directions:

  1. Preheat oven to 350F.
  2. In a medium mixing bowl combine Bob’s Red Mill Gluten-Free flour and baking powder. Set aside.
  3. Cut the chilled butter into cubes.
  4. In a stand mixture fitted with the paddle attachment, combine butter and swerve. Mix until well combined.
  5. Add the egg, vanilla extract, coconut milk and continue mixing until well incorporated.
  6. Slowly add the flour mixture and mix until dough forms.
  7. Prepare a rolling surface by spending a thin layer of flour.
  8. Form the dough into a large ball and place on rolling surface.
  9. Flour the rolling pin and roll the dough until it’s about 1/4 inch thick.
  10. Cut into shapes, place on parchment lined baking sheet, and bake for 10-12 minutes.

Frosting:

  1. Beat room temperate organic grass-fed butter until light and fluffy,
  2. Add Swerve, collagen, coconut milk and vanilla and mix well.
  3. Use natural food colouring such as beetroot powder, turmeric, or spirulina for pink/red, yellow, and blue/green frosting colour.
