Roasted Honey Turmeric Carrots
- Preheat oven to 350 degrees. Peel and rinse carrots. Cut carrots in half lengthwise and toss with the avocado oil. Warm honey slightly until it becomes runny.
- Transfer carrots to a parchment lined baking sheet, drizzle 1 tablespoon of the melted honey over the carrots, and sprinkle with thyme. Bake for 20 minutes or until soft and lightly roasted. Drizzle with the remaining honey and add to serving dish.
