Roasted Red Pepper Dip

Roasted red peppers are fun, healthy way to take your veggies to a whole new level. Pair this popular dip with veggies, chips, or olives, to wow your guests and indulge in a salty, smooth snack without compromising any of your nutritional goals. 

  1. Start by roasting the peppers and garlic in your BBQ on high heat until the outside has a charcoal burnt texture, about 20 minutes. 
  2. Put the peppers and garlic into a bowl and cover with a plate for 10-15 minutes. This will steam them so they are easier to peel. 
  3. Peel your garlic. Set aside.
  4. Peel your peppers and remove the seeds and stem. Set aside.
  5. Place all of the ingredients in a food processor or high-speed blender.
  6. Gently blend until you have a balanced texture and nice thickness for dipping.
  7. Serve immediately. 

The dip will keep for up to 2 days.
