Pan-Roasted Brussels Sprouts with Vegan Parmesan
- Clean Brussels sprouts by removing outside leaves and cutting off a bit of the stem. Cut sprouts in half from top to bottom. Heat oil in a frying pan over medium-high heat, and sauté them until al dente with a golden crust, about 5 to 7 minutes. Season with salt, pepper, and nutmeg. Add vegan parmesan, lower the heat to the lowest setting, cover, and let cheese melt for 1 to 2 minutes. Keep warm.
Note: If you’re making only Brussels sprouts or only beans (rather than both), double the ingredient amounts to compensate. There’s no such thing as too much in a festive meal—leftovers are always welcome! Serve individual portions of each dish or present it in the middle of the table on platters and in bowls for friends and family to serve themselves.
