Paleo Pumpkin Spice Muffins

These adorable treats offer a healthier option for halloween snacks. The recipe is Paleo friendly and provides an option to also make it keto friendly.

Paleo Pumpkin Spice Muffins



  1. Preheat over to 350.
  2. Mix together all dry ingredients and break up clumps
  3. Mix together all wet ingredients
  4. Combine dry with wet ingredients and stir in chocolate chips
  5. Bake for 20-25 minutes. Makes 10 muffins.

Cashew “buttercream” frosting 

  1. Blend all ingredients together in a high power blender for about 1 minute.
  2. Transfer to a large bowl and freeze for 30 minutes.
  3. Take frosting out of the freezer and whip with a whisk and freeze again for 10 minutes.
  4. Repeat that step 4 times (important step as if it’s not cold enough it will not be fluffy and light)
  5. Pipe buttercream frosting on cool cupcakes.
