Paleo Almond Flour Waffles

Easter plans may be looking different than we are used to, but it doesn’t mean that you can’t create a beautiful brunch to help boost your spirits. These Almond Waffles from Bailey are delicious and an easy way to brighten your table and enjoy the spring weekend.  Don’t forgot to add a tasty beverage and decorate the table with fresh flowers and fun settings.

Directions

  1. Preheat waffle iron and spray with cooking spray.
  2. Beat egg whites to stiff peaks in a medium bowl and set aside.
  3. In a separate bowl, combine the almond flour, baking powder, sweetener, and salt.
  4. Melt butter and almond butter then add to the flour mixture. Once fully combined, add the yolks, almond milk and vanilla to the batter.
  5. Fold in the egg whites with a spatula (being careful not to break down the whites too much). The batter should be fluffy and light.
  6. Pour about 3/4 cup batter onto waffle iron. Allow waffle to cook. I cook mine on the highest setting and a little longer from when the waffle iron goes off, so the waffles are a little crisper!
  7. To get the waffles even crispier, remove from waffle iron and toast in toaster for a few minutes!
  8. Top with coconut whipped cream, strawberries, figs, and whatever else your heart desires!”
