Juicing Pulp Pesto
- Reserve 2 cups of pulp the next time you make juice. It can be a mixture of green vegetables—kale, romaine, parsley, cucumber, celery, etc. Try adding something mildly sweet too, like green apples, grapefruit, or other citrus.
- Add all the ingredients to a food processor. Pulse until smooth.
- Season with salt and pepper.
Use the same way you would a traditional pesto. Toss with pasta, spread on pizza, use as a dip with vegetables, or on a wrap.
