Gluten-Free Peach Cobbler

Peach cobbler is one of the most iconic ways to indulge in local peaches. Served with a scoop of your favourite ice cream, drizzle of honey and just the right amount of crunchy topping this gluten-free twist is sure to leave you s-peach-less.

Directions

Filling

  1. Preheat the oven to 400°F
  2. Combine peaches, honey, lemon juice vanilla and corn starch in a 9-inch square baking pan and spread evenly.

Topping

  1. Mix together almond flour, sugar, sugar, baking powder, and salt.
  2. Cut butter into small chunks and incorporated into flour mixture until a crumbly texture is formed.
  3. Lightly whisk eggs and stir in until combined.
  4. Add milk a little at a time, stirring between additions, until the mixture becomes well incorporated.
  5. Spread the batter evenly over the filling and sprinkle the top with two tablespoons of sugar.
  6. Bake 45 minutes or until the filling is bubbling and the topping is golden.
