Ghee Mashed Potatoes
- Peel, wash, and cube potatoes. Add to a pot, cover with water and bring to a boil. Cook for about 20 minutes or until fork tender. Drain potatoes and return them to the pot.
- Add in ghee, salt, and milk, mash by hand or use an immersion blender until potatoes reach desired consistency. Add to serving dish and top with ghee and shopped parsley.
