Vegan Chickpea Curry
Freezer Prep Directions
Place all the ingredients in a large freezer bag. Remove as much air as possible. Freeze up to three months.
- Allow to thaw overnight in the fridge.
- Dump the ingredients in the slow cooker, stir and cook on low for 5–6 hours.
- Add squeeze of lime juice and season with salt and pepper, to taste.
- Serve over rice, quinoa or with naan bread.
- Optional: Top with chopped cilantro.
