Fig, Caramelized Onion & Mint Jam
- Melt the butter in small pot on medium-low heat. Add the onions and slowly cook them down until they are soft and creamy in texture.
- Add the remaining ingredients, except for the mint. Raise the heat and bring the mixture to a simmer.
- Once the liquid is almost all gone, remove the mixture from the heat and lightly blend the mixture with a hand blender. Stir in the mint.
- Serve the jam warm. Otherwise, preserve it in the traditional way or freeze it.
