Chunky Chickpea & Roasted Garlic Dip
- Cut a thin (¼ in.) slice from the top of each head of garlic to slightly expose the cloves. Place garlic in a small baking dish. Drizzle with a third of the olive oil. Roast in 400° F oven until soft, about 30 minutes. Allow to cool; squeeze out all of the cloves and transfer to a mixing bowl.
- Drain chickpeas in a colander. Rinse chickpeas well under cold water; shake off excess water. Add chickpeas, olive oil, lemon juice, and spices to bowl; process with immersion hand blender into a chunky mash.
- Roughly chop the herbs, blend into mixture and transfer to a serving bowl.
- Serve with assorted veggies, crackers, or fresh bread.
