Cherry Chia Jam
- Place the fruit, lemon juice and sweetener in a small saucepan over medium-high heat. Simmer 15 minutes until it bubbles and starts to break down; use a fork to mash the fruit to your desired consistency. If you prefer a smooth jam, then blend in a food processor.
- Remove from the heat and stir in the chia seeds and let it sit for least 15 minutes to allow the chia seeds to gelatinize.
- The longer it sits the jammier it gets. Keep remainder in an airtight glass container in the refrigerator up to 10 days.
