Jillian Harris: CAPTAIN’S KALE CAESER SALAD

Being on my New Years health kick and with my Scrub Captain away this week… I recently made his almost famous Kale Caeser Salad in his honour. We should seriously be copy righting this dressing….it’s that good!!! So shhhhhhh…don’t tell anyone!!! It took enough convincing to be able to share it with YOU!!! I hope you enjoy it as much …

Directions:

  1. Dressing – mix and shake all liquid ingredients (including anchovy paste and garlic). Once all liquids are mixed add S&P, grated parm and mayo. I add the lemon juice and a tinch more vinegar at the very end so I can control the citrusy taste I want and extra added volume.
  2. Bacon – get the good UNCUT stuff and cut it into cubes and fry for quick juicy bacon bits.
  3. Croutons – take a loaf of uncut sourdough, rip it into tiny pieces (so much more rustic this way), toss in a bit of olive oil salt and pepper and bake until brown.
  4. Serve it all together, top with a generous dose of parmesan cheese, and you’ve got yourself YUM YUM MIND BLOWING YUUUUUMMMM!
