Avocado Mac & Trees

Because plants always go down easier with the kiddos when surrounded with beloved noodles!  This dish literally takes less than 10 minutes to make. Okay maybe 15, but that’s still faster than calling for takeout! Healthy, kid- approved, easy, and makes for great leftovers. Gotta love when you can check off all of those boxes in just one pot!!

Directions

Avo Sauce
Blend all ingredients above with a stick blender (or simply mash together with a fork, if you are ok with a chunkier texture). Set aside.

Pasta 

  1. Boil penne noodles according to package directions; adding all of the chopped broccoli to the pot for the last 5 minutes of cooking time (boil on low so that you can have the lid on, allowing broccoli to steam cook)
  2. Strain noodles and broccoli and return to pan over low heat
  3. Stir in avocado “sauce”, along with half of a can of drained and rinsed chickpeas/beans
  4. Add avocado sauce and stir until it’s heated through
  5. Top with nutritional yeast (or Parmesan) and serve.
