Apricot Jam (Refined Sugar-Free)

There’s something nostalgic and summery about a spoonful of apricot jam—sweet, tangy, and sunshine in a jar. This healthy version skips the refined sugar and lets the natural flavour of ripe organic apricots shine, with just a touch of maple syrup or honey for sweetness. It’s easy to make, free from pectin, and perfect for spreading on toast, stirring into yogurt, or gifting to friends.

Directions

  1. Wash, halve, and pit the apricots. Chop them into quarters or smaller pieces if you prefer a smoother jam.
  2. Add the apricots to a large saucepan over medium heat. Stir in the maple syrup and lemon juice. Bring to a simmer, stirring occasionally.
  3. Once bubbling, reduce the heat and let simmer uncovered for about 25–30 minutes, stirring frequently. As the apricots soften, mash them gently with a spoon or potato masher until you reach your desired consistency.
  4. The jam will naturally thicken as it cooks. If you want it thicker, you can simmer it a little longer or stir in 1–2 tbsp of chia seeds at the end and let sit for 10 minutes off heat.
  5. Remove from heat and stir in vanilla or cinnamon, if using. Let the jam cool before transferring to clean jars. Store in the fridge for up to 2–3 weeks, or freeze for longer storage.
