Mama’s Chicken Soup

This recipe is part of Alexa’s Spring Cleanse Challenge Meal Plan. Take the challenge!

“No need to think about what to eat and when, with this easy meal plan. I’m so lucky to find healthy, convenient choices at a Nature’s Fare Bistro – and if you can’t, these choices are easy to make or find elsewhere.  Don’t forget, always eat organic, when possible!” – Alexa

  1. Wash one whole chicken and place in a huge pot.
  2. Cut and add 2 parsnips, 2 carrots, 2 celery, 4 garlic cloves, 2 bunches of fresh herbs (dill and parsley), and 2 onions halved. Put a clove in the center of each onion.
  3. Cover with water. Add salt and pepper. Bring to a boil, then reduce heat and simmer for 3-5 hours.
  4. Remove chicken and veggies from pot. You will have a clear broth.
  5. Shred chicken and set aside. It should be fully cooked.
  6. Mash veggies through a strainer back into the pot.
  7. Add your choice of veggies – like carrots, celery, broccoli, peas, corn, spinach, chard, kale, potatoes.
  8. Add your choice of grains or pasta, if desired – like barley, macaroni or quinoa.
  9. Season to taste with salt and pepper.
