Quinoa Pasta with Prawns and Yoso™ Garlic Cashew Cream Cheese

This recipe is flexible in regard to quantities. Use a small can of tomatoes for 1-2 people, and a large can for 3-4 people. Adjust number of prawns according to how many people are eating.

Directions

  1. Sautee 4 minced garlic cloves with 4 diced roma tomatoes.
  2. I love thyme so I added the leaves from about 4 sprigs of thyme.
  3. Add a can of diced tomatoes, and about ½ of a container of Yoso Garlic Cashew Cream Cheese. Adjust to taste.
  4. Add frozen prawns.
  5. Cook a package of Quinoa pasta – spaghetti or linguine noodles. Any long, flat noodle will work.
  6. Add cooked pasta to sauce pan. Finish with salt, pepper and chopped Italian flat-leaf parsley.
