Broccoli with Turmeric and Tomatoes – quick and healthy side dish for four people

Ingredients:

2 tbsp organic extra-virgin olive oil

2 organic yellow onions cut into slices

¾ tsp turmeric

1 ½ pounds organic broccoli (about 2 large stalks), stems cut into ¼-inch slices, tops cut into florets

1 cup organic diced tomatoes (either fresh or canned)

1/3 cup water

¾ tsp sea salt

Directions:

1.       In a large frying pan, heat oil over moderate heat. Add onions and cook until very soft, about 10 minutes. Stir in the turmeric to coat the onions.

2.       Stir in the broccoli, tomatoes, water, and salt and bring to a simmer. Reduce the heat and simmer, covered, until the broccoli is tender, about 10 minutes. Enjoy!
